At Collab Fertility, this season reminds us how much we have to be thankful for. Since opening our doors in 2024, we’ve welcomed 22 Collab babies into the world—and 46 are on the way! Helping people fulfill their dreams of growing their families is the shared passion that drives our entire team, and we couldn’t be more grateful for the trust you place in us.

Roasted brussels sprouts with pomegranate and walnuts

Recipe by Mimi Huang, RD, Collab Fertility’s in-house Registered Dietitian Nutritionist

Serves 4–6

Ingredients
• 1.5 lbs Brussels sprouts
• 2 tbsp extra virgin olive oil
• ¼ tsp salt
• Ground black pepper to taste
• ½ cup walnuts (lightly toasted)
• ½ cup pomegranate seeds
• 1–2 tsp balsamic glaze or balsamic vinegar

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Trim ends of Brussels sprouts and slice each in half.
  3. In a large bowl, toss sprouts with olive oil, salt, and pepper.
  4. Spread on a baking sheet in a single layer, cut side down, and roast 20–25 minutes, flipping halfway through.
  5. While roasting, toast walnuts in a dry skillet for 3–4 minutes until fragrant
  6. Transfer sprouts to a serving dish, add walnuts and pomegranate seeds, and drizzle with balsamic glaze.

Fertility benefits: Brussels sprouts are rich in folate and vitamin C to support hormone balance. Pomegranates provide antioxidants and polyphenols that nourish uterine health, and walnuts add omega-3s and vitamin E to support egg and sperm quality.
